COURSE DESCRIPTION: This blended course covers alternative methods of utilizing tropical animal products for food, utilization of culls and waste. Factors affecting availability, processing options and their effect on food quality and commodity utilization. Relationships between technical and socio-economic factors on production, availability, processing, marketing and utilization. This course will be assessed via Research Papers, Presentations and Assignments.
